18 ozs Pastry flour
1 oz fresh Yeast
8 ½ ozs lukewarm milk
2 ozs sugar
2 eggs
2 ozs soft butter
1 generous pinch organic Orange zest
Pastry flour (for the work surface)
7 Tbsps chopped almonds
1 egg yolk
2 Tbsps milk

Preparation steps

Put the flour into a bowl and make a well in the center. Crumble in the yeast. Pour in the lukewarm milk and mix with 1 tablespoon of sugar and a little flour. Cover the dough and let sit for about 20 minutes. Then add in the eggs with the butter and the zest to the dough and knead into a smooth dough, until it comes away from the side of the bowl. Lightly add some flour, as needed. Cover and let sit for about 45 minutes.

Preheat the oven to 350°F.

Knead the dough again on a floured work surface and then incorporate the almonds. Divide the dough into about 12 pieces and shape each into a round ball. Place on a baking sheet lined with parchment paper. Mix the egg yolk with the milk and brush the rolls with the mixture. Sprinkle with granulated sugar. Bake in preheated oven until golden brown, about 20 minutes.

Remove from the oven and from the sheet and let cool on a wire rack. Serve.
