1 organic lemon (juice and zest)
2 eggs
100 milliliters milk
200 grams cream cheese

Preparation steps

1.

Rinse chard, trim, remove hard stalks and cut into small cubes. Blanch leaves in boiling salted water for 1-2 minutes. Shock, drain and chop. Saute cubes and leaves in 2 tablespoons of oil for 4-5 minutes or until soft.

Preheat oven to 200°C (approximately 400°F). Line wells of a muffin tin with paper liners.

Mix flour with oatmeal, bran, Parmesan and lemon zest in a bowl. Mix lemon juice, eggs and milk together. Add flour mixture and stir. Add remaining oil, swiss chard leaves and cubes and cream cheese. Pour batter into paper liners. Bake for 30 minutes or until golden brown. Remove, cool and serve.
