Tajine with Duck and Couscous

- 1 onion
- 2 garlic cloves
- 4 duck legs (ready to cook)

- 2 Tbsps olive oil
- 400 milliliters Chicken broth
- 2 Tbsps Tomato paste
- 2 Tbsps chopped parsley
- 2 sticks cinnamon
- ½ tsp ground cloves
- 1 sm can Saffron
- 4 carrots
- 1 Zucchini
- 8 dried Apricot
- 1 Tbsp honey
- 250 grams Couscous (Instant)
- 300 milliliters Vegetable broth
- parsley (for garnishing)
Preparation steps
Peel onion and garlic and chop finely. Rinse duck legs, pat dry, seaosn with salt and pepper. Heat oil in a tajine pot and brown duck legs. Remove meat from pot. Remove excess cooking fat and saute onion and garlic until soft. Add chicken stock.
Spread duck legs with tomato paste and return to the pot. Add parsley and spices and simmer, covered, for about 45 minutes on low heat.
Rinse and peel carrots. Rinse and dry zucchini. Cut both into sticks and add to the pot, simmer for 30 more minutes. Halve apricots and add together with honey to the pot, simmer for 5 more minutes.
Place couscous in a bowl, add hot broth and let soak for about 10 minutes.
Arrange couscous on a platter and top with duck and vegetables and fruit, garnish with parsley. Serve accompanied by sauce.
