Ingredients
- For the chicken wings
- 1 ½ kilograms Chicken wing (ready to cook)
- 2 Tbsps brown sugar
- 2 Tbsps Vinegar
- 2 Tbsps soy sauce
- 1 garlic clove
- 2 Tbsps vegetable oil
- cayenne pepper (to taste)
- For the sauce
- 400 grams tomato puree
- 2 Red chili peppers
- 2 garlic cloves
- 3 Tbsps olive oil
- 100 milliliters Ketchup
- half Limes
- salt
- peppers
- Lettuce (for serving)
Preparation steps
Rinse chicken wings, pat dry, and press to flatten. Squeeze the garlic through a press. Thoroughly mix remaining ingredients with garlic and pour marinade over the chicken wings. Leave covered in the refrigerator overnight, turning once. Drain the wings, reserving the excess marinade and lay them out on a foil-lined, oiled baking pan. Place in the oven at 220°C (approximately 425°F) and cook 15 minutes. Turn the pan and cook another 5 minutes. Turn the wings over and spread the remaining marinade on them. Cook another 10 minutes.
For the sauce, peel and press the garlic. Cut the chile peppers in half, remove the seeds and white membrane, and chop fine. Heat the olive oil in a pan and sauté the garlic and chopped peppers. Add the tomatoes, ketchup, and lime juice to the pan. Simmer about 10 minutes. Season with salt and pepper to taste. Puree the sauce (strain if desired). Serve chicken wings garnished with sauce and lettuce.
