3 Tbsps butter
2 Tbsps sugar
1 Tbsp Pastry flour
400 milliliters Beef broth (or vegetable broth)
salt

4 Tbsps parsley
100 milliliters Whipped cream (min. 30% fat content)

Preparation steps

1.

Rinse, peel and halve turnips if large. Melt butter and sugar in a pot, and cook until beginning to caramelize. Add turnips, sprinkle with flour and pour in cold broth. Season with salt and pepper. Cover and cook until turnips are tender, 25-35 minutes.

2.

Rinse and chop parsley. Stir in cream in the last minute of cooking time (do not allow it to boil). Season to taste.

3.

Serve turnips sprinkled with parsley.
