- ½ chicken
- 2 Tomatoes
- 150 grams mixed Lettuce (oak leaf, lettuce, Batavia)
- 50 grams Fresh herbs (Thai basil and cilantro)
- 1 onion
- 1 Thai eggplant
- 1 garlic clove
- 1 Tbsp Peanut oil
- For the marinade
- 4 Tbsps soy sauce (light)
- 1 Tbsp Oyster sauce
- 2 Tbsps Lime juice
- 3 Tbsps Peanut oil
- 2 Tbsps water
- salt
- peppers
Preparation steps

Remove skin from chicken and cut into small pieces. Rinse lettuce and herbs under cold water. Tear into smaller pieces if desired and shake dry.

Cut Thai eggplant into cubes. Fry eggplant and finely chopped garlic in 1 tablespoon oil. Set aside and let cool. Peel, halve and slice onion. Halve and core tomatoes and cut into slices. Mix salad ingredients together and divide among salad bowls.

In a glass measuring cup, mix all ingredients for the marinade together. Season to taste and drizzle over the salads. Serve immediately.
