- 1 Cucumber (finely sliced)
- 1 Fennel bulb (finely sliced)
- 1 cup finely sliced Radish
- 1 cup Arugula
- ¼ cup olive oil
- 1 Tbsp Champagne vinegar
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
Preparation steps

In a large bowl add cucumber, fennel, radishes and arugula. Pour in olive oil and vinegar and season with salt and pepper. Toss gently until all well incorporated. Portion onto individual plates and serve.
