- 2 kilograms starchy potatoes
- salt
- freshly grated Nutmeg
- 2 Tbsps toasted White bread crouton
Preparation steps

Peel about 750 grams (approximately 26 ounces) potatoes, coarsely chop, and cook in salted water until tender. Drain the potatoes and mash well while hot.
Peel the remaining potatoes, grate finely and squeeze well. Collect the potato juice and wait until the starch has settled, drain the water and add the starch to the grated potatoes.

Add the mashed potatoes, as hot as possible, over the grated potatoes. Season with salt and nutmeg, and mix well. Make small dumplings from the potato mixture and stuff some croutons in the middle of each dumpling.
Place the dumplings into boiling salted water, reduce the heat and cook until done for about 20 minutes.
