6 sprigs thyme
vegetable oil (for frying)
4 Tbsps balsamic vinegar
60 grams sugar
For the dough
1 tsp Baking powder
200 grams Yogurt (0.1% fat)
2 eggs
80 milliliters Canola oil
40 grams grated Parmesan
freshly ground peppers
2 sprigs thyme

Preparation steps

1.

Peel onions and garlic. Blanch together in salted water for about 2 minutes. Shock in ice water and drain well.

Preheat the oven to 180°C (approximately 350°F). Line a muffin tin with paper liners. 

3.

Combine flour and baking powder. Beat yogurt, eggs and oil. Stir in flour mixture, then cheese. Season with salt and pepper.

Fill each muffin well 1/3 full. Add a bit of onion, garlic and thyme to each, then top with remaining dough. Bake for 25-30 minutes.

Fry remaining thyme in hot oil. Drain on paper towels.

5.

Caramelize vinegar, sugar and 2 tablespoons water in a hot pan. Let cool down.

6.

Remove muffins oven and release from tin. Garnish with thyme and sauce, then serve.
