1 garlic clove
4 eggs
100 grams Goat cheese
½ organic lemon (Juiced and zested)
80 grams Pastry flour
75 milliliters milk

Preparation steps

Grease baking pan with oil.

Rinse tomatoes and arrange in a pan. Rinse basil, shake dry, pluck off leaves and chop coarsely. Peel garlic and chop very finely. Whisk eggs with cream cheese, garlic, lemon juice and zest until smooth. Add flour and milk to egg mixture and whisk into thick batter. Season with salt and pepper. Add basil to tomatoes and spread with batter. Cut goat cheese into pieces or strips, spread on batter and bake gratin in preheated oven at 180°C (approximately 350°F) for about 30 minutes or until golden brown. Remove from the oven and serve.
