1 handful parsley

Preparation steps

1.

Rinse and halve the cherry tomatoes. Peel the onions, cut into quarters and cut the quarters into thin slices. Roast the pine nuts in a dry skillet. Rinse the herbs, spin dry and coarsely chop.

2.

Place the tomatoes, onions, pine nuts and herbs in a bowl. Add the goat cheese. Drizzle with 4 tablespoons olive oil and serve sprinkled with salt and plenty of pepper. Serve with fresh, crusty white bread.
