1 Tbsp extra virgin olive oil
1 cup Grape tomato (or cherry)
1 cup loosely packed, fresh Baby spinach
2 cloves garlic cloves (thinly sliced)
salt (to taste)
freshly ground Black pepper (to taste)
2 cups Spaghetti (cooked)
¼ cup shaved Parmesan
fresh Basil (for garnish)

Preparation steps

Add olive oil to a medium nonstick skillet heated over medium-high heat. Add the tomatoes, spinach, and garlic and sauté for 2-3 minutes until spinach is soft and bright green and tomatoes are soft. Add salt and pepper to taste, if desired.

Stir in the cooked pasta and continue to cook and stir the mixture for a minute or two to heat up the pasta and blend the flavors. Turn off the heat. Top with Parmesan shavings. Let sit for a couple of minutes. Garnish with basil (optional). Serve.
