4 cups canned, peeled Tomatoes (in juice)
0.333 cup good-quality olive oil
1 onion (finely chopped)
2 cloves garlic cloves (minced)
1 tsp salt
1 bay leaf
1 tsp granulated sugar
1 Tbsp unsalted butter
1 cup Italian Olives (pitted)
4 cups dry Penne
1 handful fresh Basil (for garnish)
freshly grated Parmesan (for sprinkling)

Preparation steps

Place canned tomatoes in a blender or food processor and pulse several times. Heat the olive oil in a pot over medium-high heat. Add the onion and garlic, stirring for about 3 to 4 minutes, until soft and fragrant. Add the tomatoes, salt and bay leaf to the pot. Reduce heat to low and cook for about 45 minutes or until the desired thickness is achieved, stirring frequently. Add the sugar and butter about 10 minutes before the sauce is ready.

Boil the pasta according to package instructions or until al dente, strain and toss with the tomato sauce and olives. Serve with freshly grated Parmesan cheese. Garnish with fresh basil leaves. Enjoy.
