Ingredients

For the turkey
20 ozs turkey breasts
3 sprigs thyme
1 handful Basil
1 handful Chives
1 Tbsp olive oil
½ lemon (juiced)
salt
peppers
For the salad
1 Red onion
6 ozs salad (such as Frisée, sorrel, arugula)
4 Tomatoes
1 Grapefruit
1 tsp honey
1 Tbsp olive oil
salt
peppers

Preparation steps

For the turkey: rinse and pat dry turkey, dice. Rinse thyme and basil, shake dry and pluck off leaves. Rinse and dry chives, cut into rings. Cut basil leaves into strips. Combine herbs with olive oil and lemon juice, toss with turkey. Season with salt and pepper. Heat oil in a nonstick pan and saute turkey for about 5 minutes.

For the salad: peel onion and chop finely. Rinse and spin dry salad greens. Rinse and dry tomatoes, quarter and remove seeds, cut into strips. Peel and fillet grapefruit. Squeeze juice from remaining pulp and mix juice with honey and oil. Season with salt and pepper. Combine all salad ingredients and toss with the dressing. Top with turkey and serve.
