- 1 shallot
- 2 garlic cloves
- 1 Tbsp olive oil
- 3 centiliters dry sherry
- 300 grams ripe Tomatoes
- 1 bay leaf
- 1 thyme
- 125 milliliters Vegetable broth
- salt
- freshly ground peppers
- 1 pinch cayenne pepper
- 60 grams black Olives (pitted)
Preparation steps

Peel and finely dice the shallot and garlic. Heat the oil in a pan, sauté both, and add the sherry to the pan.

Blanch the tomatoes for a few seconds in boiling water. Remove from the water and rinse under cold water. Peel the tomatoes and cut into quarters. Remove the seeds and coarsely chop. Add the tomatoes, bay leaf, and thyme to the pan. Mix in the broth and bring to a boil. Reduce the heat, cover, and simmer for 30 minutes. After 15 minutes has passed, uncover the pan.

Season to taste with salt, pepper, and cayenne pepper. Finely dice the olives and stir into the sauce at the end of the cook time.
