1 kilogram ripe Tomatoes
1 Tbsp Tomato paste
1 onion
2 Tbsps olive oil
500 milliliters Broth (Instant)
200 grams Mozzarella
salt
freshly ground peppers
Tabasco sauce
Basil (for garnish)

Preparation steps

1.

Peel onion and dice finely. Rinse tomatoes, trim and chop. Heat oil in a pan and saute onion until soft. Stir in tomato paste, add tomato and saute. Stir in broth and season with salt, pepper and a few drops of Tabasco. Simmer for approximately 20 minutes. 

2.

Pour soup through a sieve, put back into the pot, heat and season to taste. Cut mozzarella into slices. distribute To serve, arrange soup in deep plates, cover with mozzarella and serve garnished with basil.
