1 shallot
2 garlic cloves
2 Tbsps olive oil
600 grams blanched Tomatoes (canned)
400 milliliters Vegetable broth
salt
freshly ground peppers
1 Tbsp chopped oregano
4 slices Ciabatta
30 grams butter
1 Tbsp oregano (for garnish)

Preparation steps

1.

Peel and finely chop the shallot and garlic and sweat in some oil. Add the tomatoes and the broth and season with salt, pepper and chopped oregano. Simmer for 20 minutes over medium heat.

Tear apart the bread and fry in some butter. Season the soup again and pour into preheated bowls.

Shower with breadcrumbs and serve garnished with oregano leaves.
