Limes (juiced)
500 milliliters Vegetable broth
1 shallot (finely chopped)
1 tsp butter
300 grams Tomatoes (skinned, halved, seeded and diced)
1 tsp fine julienne Limes (zest)
1 tsp ginger
1 tsp green chili peppers
salt
freshly ground peppers

Preparation steps

1.

Peel avocado, cut in half, remove the core and dice. Immediately sprinkle with lime juice.

2.

Sauté shallot in a pan in butter until soft. Add broth and bring to a boil. Add avocado, diced tomato, lime zest, ginger and chile pepper. Stir and season with remaining lime juice, salt and pepper. Return to a boil. Serve hot or cold.
