1 shallot (finely chopped)
1 tsp butter
10 ozs Tomatoes (blanched, halved, seeded and diced)
1 tsp Limes
1 tsp ginger
1 tsp green chili peppers

Preparation steps

1.

Peel avocado, cut in half, remove pit and dice. Immediately sprinkle avocado with lemon juice.

Heat butter in a saucepan, saute shallot until translucent, add broth and bring to a boil. Add avocado and diced tomato, cook briefly, add lime, ginger and chile pepper, stir and season with remaining lemon juice, salt and pepper. Bring to a boil. Serve hot or cold in bowls.
