1 Tbsp Curry powder
½ bunch Radish
1 bunch Chives

Preparation steps

1.

Rinse tomatoes and cut off top quarter. Scoop out seeds and some of inner flesh with a spoon, being careful not to puncture outer walls. Sprinkle tomato interior with salt and pepper. Rinse rice and drain and cook rice in salted water with 1 tablespoon curry, according to package directions. Fluff with a fork and let rice cool.

Cut chives in rings. Rinse radishes, drain and wipe dry and cut into  small, thin rectangular pieces. 

3.

Mix curried rice, chives and radishes and season with salt and pepper. Fill tomatoes with rice stuffing and serve.
