- 2 Tbsps Red wine vinegar
- 1 Tbsp balsamic vinegar
- 2 tsps Tomato paste
- salt
- freshly ground white peppers
- 6 Tbsps olive oil
- 1 garlic clove
- 1 Tbsp small Caper
Preparation steps

Whisk together the tomatoe paste and both vinegars. Gradually incoporate the oil. Season to taste with salt and pepper.

Peel the garlic and squeeze through a press. Drain and chop the capers. Mix the garlic and capers into the vinaigrette, and adjust the seasoning if necessary.
