4 chili peppers (for garnish)

Preparation steps

Rinse the tomatoes. Cut 4 tomatoes into slices. Remove the seeds and chop the remaining tomatoes. Peel and finely chop the shallots and garlic. Heat the olive oil in a saucepan. Sauté both until soft. Add the chopped tomatoes, stir to combine, then remove from the heat. Rinse, trim, and chop the chilis. Add the chili and coriander to the pot, then crush everything until combined. Season to taste with salt.

Halve the avocado, remove the seed, then remove the pulp with spoon (doing your best to keep it intact. Cut crosswise into slices. Stack the tomato slices and the avocado slices, then top with the salsa. Omit any tomato slices with the stalk. Garnish with the chili peppers and serve.
