3 shallots
2 garlic cloves
4 Tbsps olive oil
½ oz Tomato paste (1 TBSP.)
7 ozs peeled and chopped Tomatoes (can)
1 ½ ozs Ajvar (3 tbsp; seasoning paste)

1 Cucumber
½ bunch Basil
2 scallions

Preparation steps

For the chili sauce, halve chili peppers lengthwise, remove seeds, wash and chop. Peel and finely chop shallots and garlic. Heat 1 tablespoon oil in a saucepan over medium heat for 2 minutes. Stir in tomato paste, add tomatoes and ajwar, season everything with salt, pepper and 1 tbsp lime juice and simmer over low heat for 10 minutes, stirring occasionally, until creamy. Then let cool for 5 minutes.

In the meantime, clean and wash the cucumber and cut into small cubes. Wash basil, shake dry and chop. Clean the spring onions, wash and cut into fine rolls. Mix everything with cucumber cubes, salt, remaining lime juice, pepper and 2 tablespoons oil.

Heat tortilla patties in oven at 80 °C / 175 °F for 5 minutes. Heat the remaining oil in a large frying pan. Crack eggs into it and fry over medium heat for 3-4 minutes to make fried eggs. Divide tortilla patties among plates. Top with fried eggs, cucumber salsa, and chili sauce.
