½ cup cane sugar
2 Papaya (peeled, halved, deseeded and chopped)
2 Limes (juiced)

Preparation steps

1.
Place the sugar and 225 ml water in a pot and bring to the boil. Simmer for approx. 5 minutes. Remove from the heat and leave to cool.
2.
Add the papaya pieces and the lime juice to the syrup and purée. Pour into a flat container and freeze for at least four hours. Stir every 30 minutes with a fork.
3.
Use an ice cream scoop to serve the sorbet.
