If you're on a low-carb, protein-rich diet this is the dish for you. It's packed with protein thanks to the turkey and bacon, while the plums add valuable vitamins and the red peppers are high in cell-protecting antioxidants.
If you're not on a low-carb diet, serve some brown rice, whole wheat bread, or couscous on the side to add some fiber and make this a more well-rounded dish. You can also pair it with a simple side salad.

- For the stuffing
- 1 cup dried, soft Date (pitted and chopped)
- 1 cup dried, soft Plum (chopped)
- ¼ cup dry white wine
- ½ tsp ground cinnamon
- ¼ tsp ground allspice
- For the meat
- 1 turkey breast (skinned, approx. 2.5 lbs)
- 5 slices Bacon
- 3 Tbsps clarified butter
- ⅞ cup chicken stock
- 5 peppercorns (roughly crushed)
- 2 bay leaves
- For the vegetables
- 2 Red onions (quartered)
- 1 red Bell pepper (chopped)
- 1 green Bell pepper (chopped)
- 3 cups Pumpkin ( chopped)
Preparation steps

Heat the oven to 400°F.

Heat the wine in a pot. Remove from the heat and add the dried fruit. Stir in the cinnamon and the allspice and season with salt.

Season the meat with salt and ground black pepper and cut a pocket in the side. Open the meat up like a book and add the stuffing. Close the meat and secure with toothpicks. Wrap in the bacon, heat the clarified butter in a roasting tin and fry on all sides. Add a little stock, the peppercorns and the bay leaves. Cover the roasting tin and roast for 1 hour, basting often.

After one hour, add the vegetables to the roasting tin and roast for another 30 minutes until crispy. If necessary increase the temperature to 475°F.

Remove the meat from the roasting tin, slice and arrange with the vegetables on a platter.
