- 4 Turkey cutlets (each about 150 grams)
- salt
- freshly ground peppers
- 20 grams clarified butter
- 2 Apple
- 1 red onion
- 250 milliliters Chicken broth
- 2 Tbsps Mustard
- 150 grams Crème fraiche
Preparation steps

Rinse the apples, cut into quarters, remove the core and cut into wedges. Peel the onion and cut into rings. Season the cutlets with salt and pepper. Saute in hot butter about 3 minutes on each side, then remove and keep warm.

Saute the onions and apples in the pan drippings. Stir in the broth, mustard and creme fraiche. Add the cutlets to the apple mixture and simmer for about 2 minutes. Serve the turkey with the sauce on plates with mashed potatoes, if desired.
