1 kilogram starchy potatoes
salt
800 grams Apple
1 Tbsp lemon juice
1 Tbsp sugar
1 pinch Ground cinnamon
2 onions
70 grams Smoked bacon
400 grams Blood sausage
2 Tbsps clarified butter
200 milliliters milk
2 Tbsps butter
Nutmeg
freshly ground peppers

Preparation steps

1.

Peel potatoes, rinse and coarsely chop and cook, covered,  in boiling, salted water for about 30 minutes. 

2.

Peel apples and cut into quarters and remove core and cut into wedges and place in a pot and add lemon juice, sugar, cinnamon and 3 tablespoons of water and cook over medium heat for about 7 minutes.

Peel onions and cut into rings. Dice bacon. Cut blood sausage into thick slices about 1.5 cm (approximately ½ inch).

Heat clarified butter in a large skillet and fry onions and bacon until crispy. Slide onion and bacon to the side of pan and fry blood sausage slices on each side for 2 minutes.

Drain cooked potatoes and let cool slightly.

Mash potatoes and mix with milk and butter and season with salt, pepper and nutmeg. Remove 2/3 of apples and mix into potato mixture.

7.

Stir mashed potato mixture until smooth and creamy.

8.

Place mashed potatoes on plate and arrange remaining apple slices, blood sausage slices, bacon and onions and sprinkle with pepper. Serve immediately.
