8 thin Turkey cutlets (each about 80 g)
200 grams Sour cream
1 Tbsp hot Mustard
1 egg yolk
salt
freshly ground peppers
4 Tbsps freshly grated Parmesan
2 handfuls Wild garlic
vegetable oil (for cooking)

Preparation steps

Rinse and pat dry cutlets, flatten if necessary. Season with salt and pepper. Combine sour cream with mustard, egg yolk, salt, pepper and Parmesan. Rinse and shake dry wild garlic. Chop approximately 2/3 of garlic and combine with sour cream mixture.

Spread mixture on cutlets and top with remaining garlic leaves. Fold in half and secure with toothpicks. Heat oil in a pan and cook escalopes for about 5 minutes per side or until crispy brown. Remove from the pan and arrange on plates. Serve.
