- 12 slices turkey breasts (each about 60 grams)
- 250 grams Ricotta cheese
- 2 Tbsps grated Parmesan
- 2 Tbsps freshly chopped Fresh herbs (Dill and tarragon)
- salt
- 1 splash lemon juice
- freshly ground peppers
- 3 Tbsps Pastry flour
- 2 eggs
- 80 grams Sesame seeds
- 3 Tbsps vegetable oil
Preparation steps

Rinse turkey breast slices, pat dry and flatten, if necessary. Whisk ricotta with Parmesan and herbs until smooth. Season with salt, lemon juice and pepper. Spread mixture on turkey pieces and roll up, tie with kitchen string and season with salt and pepper. Coat roulades with flour. Beat eggs and dip roulades into them. Coat with sesame seeds and press gently. Heat oil in a nonstick pan and cook roulades for about 10 minutes on all sides or until golden brown.

Remove from the pan, arrange on plates and garnish with herbs. Serve.
