- 4 carrots
- 4 small Lettuce
- 125 grams turkey breasts
- 250 milliliters Chicken broth
- 1 smaller Apple
- 4 Tbsps Walnut
- salt

- 1 Tbsp Yogurt (0.1% fat)
- 1 Tbsp Mayonnaise
- 1 tsp Lime juice
Preparation steps

Peel the carrots, blanch in boiling salted water for 2 minutes, rinse and drain well. Place the turkey breast in boiling chicken stock and allow to simmer. Remove, allow to cool and cut into bite-size strips. Rinse the lettuce leaves, spin dry and place each leaf in a glass.

Mix the yogurt with the mayonnaise and lime juice, and season with salt and pepper. Peel the apple, cut in half, remove the core and cut into thin wedges. Stir the apples into the yogurt-mayonnaise. Add the meat and refrigerate for at least 1 hour, then divide among the glasses. Add a carrot stick and serve sprinkled with walnuts and freshly ground pepper.
