- 11 ozs baby Octopus
- 1 large onion
- 2 cloves
- 2 bay leaves
- 1 cup Tuna (in oil, drained)
- 1 cup Crabmeat (or surimi)
- 6 small Tomatoes (sliced)
- ½ cup Mimolette (Cheddar cheese)
- ⅔ cup canned Sweet corn (drained)
- 4 Tbsps Mayonnaise
- 2 Tbsps parsley (chopped)
- 4 Lettuce
- 4 cooked Prawn
Preparation steps

Remove the head from the octopus and carefully gut the tubes. Rinse well. Cut off the tentacles in front of the eyes and push out the 'tooth' in the middle. Discard the remains of the head and the entrails.

Stud the onion with bay leaves and cloves (attach the leaves to the onion with the cloves) and place in pot with three litres of water. Bring to the boil. Add the octopus, cover and remove from the heat. Leave to steep for around 5 minutes. and then place in cold water using a draining spoon. Drain and then slice the tubes.

Mix together the tuna, crab meat and the octopus. Add the tomatoes, cheese and sweetcorn, stir in the mayonnaise and season with salt and ground black pepper. Add the parsley and marinated for around 30 minutes.

Place the lettuce leaves in four cups and top with the salad. Garnish with the prawns.
