- 250 grams fresh Spinach
- salt
- 500 grams turkey breasts (skinless)
- 2 centimeters fresh ginger
- 1 garlic clove
- 400 grams Chinese Egg noodle
- 100 grams salted Peanuts
- 2 Tbsps Peanut oil
- freshly ground peppers
- Lime juice
Preparation steps

Rinse the spinach, trim and wilt in boiling salted water. Drain, rinse with cold water, squeeze well and coarsely chop.

Rinse the turkey, pat dry and thinly slice. Peel the garlic and ginger and squeeze through a press. Cook the pasta in boiling salted water until al dente.

Toast the nuts in a dry hot wok, remove and set aside. Heat the oil in the wok, add the turkey, sprinkle with pepper and saute until browned. Add the spinach, garlic and ginger and season with lime juice, salt and pepper.

Drain the pasta, add half of the peanuts to the wok, toss everything well and place in serving bowls. Serve with the remaining nuts.
