Turkish Delight (Lokum) with Almonds and Coconut

- 1 kilogram sugar
- 250 grams Rice flour
- 2 generous pinches Lemon salt
- 200 grams Shredded coconut
- peeled almonds (for decoration)
Preparation steps
Line a square mold (such as a small baking tray or dish) with foil. Mix the rice flour and sugar together, add 1.2 liters (approximately 5 cups) of water and bring to a boil, stirring occasionally. Pour in the lemon salt and continue cooking while stirring, until the mixture has a malleable consistency. To check for doneness, remove some of the mixture with a teaspoon and drop into ice cold water. You should be able to form a ball from the mixture in the water with your fingers.
Pour the mixture into the prepared mold and allow to set. Sprinkle a board with grated coconut and sprinkle the solidified candy. Turn the gel out onto the board and remove the foil. Cut into uniform strips and roll in the coconut flakes. Cut the strips into slices and press an almond carefully into each. Arrange on a decorative plate and serve.
