Ingredients
- For the crusts
- 225 grams Pastry flour
- 1 tsp Dry yeast
- ½ tsp sugar
- ½ tsp salt
- 2 Tbsps olive oil
- For the toppings
- 2 onions
- 2 garlic cloves
- 500 grams Ground lamb
- 2 Tbsps olive oil
- 1 tsp Cumin (ground)
- ½ tsp cinnamon
- 2 Tbsps Tomato paste
- 350 grams crushed Tomatoes (canned)
- 2 Tbsps cilantro (chopped)
- salt
- Pastry flour (for work space)
- olive oil (for brushing)
- 2 Tbsps Pine nuts
- 2 Tbsps parsley (chopped)
Preparation steps
For the crusts: Mix all ingredients, knead to form smooth dough and allow to stand for about 1 hour in warm place.
For the toppings: Peel and finely chop onion and garlic. Fry ground beef in hot oil until crumbly, add onions and garlic and stir in cumin and cinnamon. Add tomato paste, let cook then add tomatoes. Simmer for about 15 minutes, stirring occasionally, until everything is creamy. Finally mix in cilantro to taste, season with salt and allow to cool.
Knead dough on floured surface. Divide dough into four parts and roll each into an oval. Spread filling on each crust, while leaving an outer edge of about 1.5 cm (1/2 inch) free. Pull dough and squeeze ends. Brush with oil and place on baking sheet lined with baking paper. Sprinkle pizzas with pine nuts and bake in preheated oven at 200°C (approximately 400°F) for about 15-20 minutes until crispy. Serve sprinkled with parsley.
