4 Tbsps Orange juice
5 ½ cups ground almonds
½ cup chopped almonds

Preparation steps

1.
Whisk the egg whites until stiff. Gradually trickle in the sugar, continuing to whisk, until the mixture is glossy. Fold the cinnamon, orange juice, 500 g ground almonds and the chopped almonds into the egg whites. Shape into a ball and place in a bowl. Cover and chill for around 1 hour.

Heat the oven to 150°C (130°C in a fan oven), 300°F, gas 2 and line two baking trays with grease-proof paper.

Scatter the reserved almonds over the work surface and roll out the dough to a thickness of approx. 1 cm. Using a star-shaped cutter, cut the dough into stars, wetting the cutter frequently with cold water to prevent sticking. Transfer the stars to the baking trays and bake in the oven for 25-30 minutes.
4.
Remove from the tray and leave to cool. Dust with icing sugar before serving.
