For the cookies
3 cups all-purpose flour
½ tsp Baking powder
½ tsp salt
1 cup unsalted butter
1 ¾ cups sugar
2 eggs
1 tsp vanilla extract
1 cup milk
For the icing
0.333 cup plain Dark chocolate (finely chopped)
0.333 cup water
¼ cup light corn syrup
4 cups powdered sugar
½ tsp vanilla extract

Preparation steps

1.
For the cookies: heat the oven to 190°C (170° fan) 375°F gas 5. Line 3 large baking trays with non-stick baking paper.

Sift together the flour, baking powder and salt and set aside.
3.
Beat the butter until softened, then gradually add the sugar and beat until the mixture is light and fluffy.

Add the eggs and vanilla and beat until combined.

Alternately add the flour mixture in 4 additions and the milk in 3 additions (beginning and ending with flour) and mix until just combined.

Scoop small mounds of dough onto the baking trays, about 5cm|2" apart. Using moistened fingers, gently press each mound of dough into a 6cm|2 1/2"disc.

Bake for about 20 minutes, until the edges are set and light golden brown. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
8.
For the icing: melt the chocolate in a heatproof bowl over a pan of simmering water. Set aside.
9.
Heat the water and syrup in a pan to a boil. Remove from the heat and whisk in the icing sugar and vanilla.
10.
Put 175ml| 3/4 cup of the icing into the bowl with the melted chocolate and whisk to combine.

Spread about 2 tablespoons of the white icing onto half of each cookie. If the icing begins to thicken too much, stir in a teaspoon of warm water, until smoother. Place the iced cookies on a wire rack and leave to set for at for at least 15 minutes.
12.
Spread the chocolate icing on the other half of each cookie. If the chocolate icing thickens too much, place in a heatproof bowl over a pan of simmering water so that it can re-melt. Place the finished cookies on a wire rack and leave to set for at least 1 hour.
