Onions are rich in both fiber and sulfur-containing essential oils, both of which ensure optimal digestion. But the essential oils can do even more: they act like a natural antibiotic and can render bacteria in the digestive tract harmless.
To turn the Valais onion salad into a veggie version, you can replace the bacon with finely diced and briefly sautéed tofu.

Preparation steps

Peel and finely slice the onions. Scald with hot water and drain on a sieve.

Cut the bacon into small cubes and fry until crisp, then add onion slices. Add the vegetable broth and steam onions for about 4 minutes on low heat.
3.
Add vinegar at last. Wash parsley, shake dry and chop coarsely. Season Valais onion salad with salt and pepper and serve garnished with chopped parsley.
