- 2 Vanilla bean
- 250 grams Pastry flour
- 150 grams blanched, finely ground almonds
- 100 grams sugar
- 200 grams cold butter (cubed)
- 30 milliliters Whipped cream
- Cellophane
- Silver ribbon
Preparation steps
1.
Halve the vanilla pods lengthwise and scrape out the seeds. In a bowl, combine the flour with the almonds, sugar, and the butter. Add some cream and the vanilla seeds.

Divide the dough into 4 portions. On a floured surface, shape each portion into a log, 2-3 cm (approximately 3/4 to 1 inch) in diameter. Wrap in plastic wrap and refrigerate overnight.

Preheat the oven. Line baking trays with parchment paper. Slice each log into 12-15 pieces. Shape into crescents and place on the baking sheet.

Heat the oven to 160°C (approximately 325°F). Bake the cookies until set, about 12-15 minutes. Tip the top of each cookie in icing sugar while still warm. Allow to cool.
5.
Divide the cookies between cellophane bags and seal with silver ribbon.
