- For the batter
- 150 grams sugar
- 100 grams Whipped cream
- 20 grams butter
- 1 Vanilla bean (seeds)
- 200 grams Pastry flour
- 2 tsps Baking powder
- 2 Tbsps cornstarch
- 1 small Banana
- 1 pinch salt
- 3 eggs
- For the topping
- 1 Muffin tin (12-well)
- butter (for the pan)
- Pastry flour (for the pan)
- 100 grams Vanilla frosting
- silver Sugar pearls
- Sugar blossom
Preparation steps

Grease the muffin tin with butter and dust with flour.

For the batter, bring 100 grams (approximately 3.5 ounces) of sugar, the cream and the butter to a boil. Add the vanilla seeds. Simmer over low heat for about 5 minutes. Remove and let cool.

Mix the flour, baking powder and cornstarch. Peel and puree the banana. Blend the banana puree with the vanilla cream, remaining sugar and salt. Stir in the eggs. Quickly stir in the flour mixture.

Pour the batter into the muffin tin. Bake for about 20-30 minutes at 180°C (approximately 350°F). Remove from the oven and let cool on a wire rack.

For the topping, melt the vanilla frosting over a hot water bath. Spread the frosting on the cupcakes. Serve decorated with sugar pearls and flowers.
