2 Tbsps honey
3 ½ ozs Whipped cream
1 tsp freshly chopped Lemon balm
1 handful Blueberries (for garnish)

Preparation steps

For the pears: Rinse, quarter, and core the pears and cut the fruit into slices. In a saucepan, combine 1 cup of water with the pear brandy. Remove the lemon zest and squeeze the juice. Add the juice to the saucepan along with the cloves, honey, and the split vanilla bean. Bring to a boil, add the pears, and remove from the heat. Cool, stirring occasionally.

For the cream: In a bowl, mix together the mascarpone, the vanilla bean seeds and honey. Whip the cream to stiff peaks. Fold the whipped cream and lemon balm into the mascarpone mixture. Serve the cream with the pears on plates and garnish with lemon balm and blueberries.
