- 4 Pear
- 1 Vanilla bean
- 1 oz butter (2 TBSP.)
- 1 oz coconut sugar (2 TBSP.)
- ½ tsp cinnamon
- 1 lemon (juice)
- 3 ½ ozs Pear juice
- ½ pomegranate (seeds)
- 2 sprigs mint
Preparation steps
Peel and halve the pears, cut out the core, leaving the stems on the fruit. Cut vanilla bean in half lengthwise and scrape out pith with a knife.
In a frying pan, caramelize butter with coconut blossom sugar in about 3 minutes over medium heat. Add pears, vanilla pulp and pod and cook, tossing, over medium heat for 5 minutes until golden brown. Dust with cinnamon, deglaze with lemon and pear juice and simmer over low heat for about 3 minutes.
Remove the pomegranate seeds from the fruit. Wash mint, shake dry and pluck leaves. Sprinkle the vanilla pears with pomegranate seeds and mint.
