- 1 beet
- 3 striped beets
- ½ Daikon radish
- 2 Watermelon radishes or alternatively normal Daikon radish
- salt
- 2 Tbsps white Almond butter
- 2 Tbsps Soy yogurt
- 1 Tbsp lemon juice
- 1 Tbsp olive oil
- 1 Apple
- 1 bunch Radish
- 1 handful Watercress
- peppers
Preparation steps
Clean, wash, and peel beets, striped beets, radishes, and watermelon radishes to taste; thinly slice separately and place each in bowls, salt lightly, and let sit for about 15 minutes.
Meanwhile, puree almond paste, soy yogurt, lemon juice and olive oil and season with salt.
Wash, halve, clean and thinly slice the apple. Clean, wash and finely slice the radishes. Select watercress, wash and shake dry.
Arrange marinated vegetable slices with apple slices and radishes on a platter. Drizzle vegan carpaccio with dressing, garnish with cress and sprinkle with pepper.
