Soya drink, soya cream and tofu are products made from the protein-rich legume soya. 100 grams of tofu contain about 9 grams of protein. Especially for Veagner this building material is important for cells. But there is more to the bean: isoflavones can reduce menopausal symptoms, secondary plant substances are said to reduce the risk of prostate cancer and total cholesterol and LDL cholesterol can be lowered.
Use wholemeal pasta, it contains more minerals and fibre.

- 500 grams Tagliatelle (white and green)
- salt
- 1 onion
- 1 garlic clove
- 2 Tbsps vegan Margarine
- 2 Tbsps Pastry flour
- 250 milliliters Soy milk
- 250 milliliters Soy cream
- 200 grams Smoked tofu
- 1 Tbsp lemon juice
- Nutmeg
- freshly ground peppers
- 4 Cherry tomatoes
Preparation steps
Cook the tagliatelle in salted water until al dente. Drain well.
Peel and finely chop the onion and garlic. Sauté in the margarine until translucent. Stir in the flour and slowly pour in the soy milk and soy cream while stirring. Simmer for a few minutes until creamy and slightly thickened. Grate the smoked tofu into the sauce and season with lemon juice, nutmeg, salt and pepper.
Preheat the oven to 180°C (approximately 350°F). Grease a gratin dish with vegan margarine.
Transfer the pasta into the prepared pan and pour the sauce over top. Rinse the cherry tomatoes and cut in half. Place cut side up on the noodles and bake for 40 minutes, until golden brown. Remove from the oven, allow to cool briefly, cut into squares and serve.
