1 Zucchini (Or other vegetables of your choice)

Preparation steps

1.

Preheat oven to 200°C (approximately 400°F). Peel beet and slice into thin slices. Rinse zucchini and cut into very thin slices. Sprinkle with 1 teaspoon salt and let rest.

Brush beet slices with oil and place on a baking sheet lined with parchment paper. Place on middle rack and bake for 10 minutes.

3.

Pat zucchini dry and brush with oil. Add to baking sheet and bake for another 10 minutes or until crispy. Lightly salt before serving.
