- 300 grams Mixed seafood
- 600 grams
- 2 garlic cloves
- 1 bunch scallions
- 1 Cucumber
- 3 Tomatoes
- 4 sprigs cilantro
- 2 Tbsps vegetable oil
- Fish sauce
- salt
Preparation steps
1.
Thaw the mixed seafood, rinse and pat dry.

Peel the garlic and chop finely. Rinse the scallions and cut into 3 cm (approximatey 1 inch) long pieces and cut in half lengthwise.

Rinse the cucumber, peel, halve lengthwise and remove the seeds. Then cut into slices.

Rinse the tomatoes, remove stalks and cut into wedges.
5.
Rinse the cilantro, shake dry and pluck leaves.

Heat oil in a pan and sauté garlic in it. Add in the seafood and saute for another 2 minutes. Add in the cooked jasmine rice, tomatoes, cucumbers and spring onions, and stir fry for about 4-5 min. Season with salt and fish sauce.
7.
Serve garnished with coriander. Serve as desired with chile sauce and soy sauce.
