2 small Pita bread
1 Cucumber
2 Tomatoes
2 Red Bell pepper
½ Iceberg lettuce
½ bunch parsley
1 shallot
1 garlic clove
½ bunch scallions
6 olive oil
1 Tbsp lemon juice
2 Tbsps white balsamic vinegar
Sea salt
freshly ground peppers

Preparation steps

1.

Cut pita bread into small cubes. Heat about 3 tablespoons of olive oil in a pan and saute pita bread cubes until golden. Drain on paper towels.

2.

Rinse and dry cucumber, trim both ends, and halve lengthwise, remove seeds with a spoon and dice.

3.

Rinse and dry tomatoes, cut into quarters and remove seeds and stalks. Cut into cubes.

4.

Rinse bell peppers, halve and remove seeds and ribs, cut into cubes. 

5.

Rinse and dry lettuce, cut into strips. 

6.

Rinse parsley, shake dry, pluck off leaves and set some aside for garnishing. Chop the rest coarsely.

7.

Peel shallot and garlic and chop finely.

8.

Rinse and dry scallions, cut into rings.

9.

Combine remaining oil with lemon juice and vinegar in a bowl.

10.

Combine all ingredients (except pita cubes) and drizzle with dressing. Season with salt and pepper and sprinkle with pita cubes. Garnish with parsley and serve.
