- 1 onion
- 1 garlic clove
- 500 grams waxy potatoes
- 2 stalks Leeks
- 2 stalks Celery
- 2 Tbsps sunflower oil
- 1 bay leaf
- 4 sprigs thyme
- salt
- freshly ground peppers
- 800 milliliters Beef broth
- 4 Sausage
- 1 Tbsp clarified butter
Preparation steps

Peel onion, garlic and potatoes. Chop onion and garlic finely, cut potatoes into 2 cm (approximately 3/4 inch) cubes. Rinse leeks and cut into rings. Rinse and slice celery.

Heat oil in a saucepan, saute onion and garlic until translucent. Add potatoes, leeks and celery and saute briefly. Add bay leaf and thyme, season with salt and pepper, add broth and bring to a boil. Simmer for about 20 minutes on low heat. Add more broth if needed. Remove thyme and bay leaf, season to taste.

Heat butter in a pan and brown sausages on all sides. Arrange sausages and stew on plates and serve.
