Preparation steps

Peel the carrots and cut into thin sticks or slices.

Peel the kohlrabi and chop.
3.
Rinse, trim and cut the celery into about 5 mm thick slices.

Rinse, trim and cut the scallions into 1 cm (approximately ½ inch) wide rings.

Rinse the snow peas and trim the ends.
6.
Rinse the tomatoes and cut into thin slices.
7.
Cut the hot dog sausages diagonally into slices.

Heat butter in a pan and saute the scallions, carrots, celery and kohlrabi in it. Pour in the beef broth, bring to a boil, add broccoli florets, and cook for 8-10 minutes. Add the tomatoes and snow peas before the end of cooking.
9.
Season the vegetable stew with salt and pepper. Add the sausage slices and heat for a few minutes. Serve sprinkled with parsley.
