- 400 grams Kidney beans (canned)
- 120 grams breadcrumbs
- 1 red onion
- 1 pinch ground Cumin
- salt
- peppers
- Chili powder
- 1 Tomato
- ½ Iceberg lettuce
- 5 Tbsps vegetable oil
- 4 White rolls
- 4 eggs
Preparation steps
Rinse the beans in a colander and drain well. In a food processor, pulse the beans until finely chopped. Transfer to a bowl and stir in the breadcrumbs and up to 75 ml (approximately 5 tablespoons) of warm water until thick and malleable.
Peel and finely chop the onion and add to the bowl along with the cumin, season with salt, pepper and chile powder, mix well. Cover and let stand 30 minutes.
Meanwhile, rinse and the tomato and cut into four slices. Rinse the lettuce, spin dry and cut into strips.
Preheat the broiler.
With dampened hands, shape the bean mixture into 4 patties (if necessary, add more water or breadcrumbs). Heat 3-4 tablespoons of oil in a skillet and brown the patties on both sides, 3-4 minutes.
Halve the rolls horizontally and toast, cut side up under the broiler. Heat the remaining oil in a skillet, crack the eggs into the pan and cook until the whites are set and the yolks are still slightly runny. Lightly season with salt.
Place the lettuce, tomato slices, burgers and fried eggs on the buns and serve immediately.
