4 Taco shells
400 grams wide, green Beans
1 white onion
2 Tomatoes
1 Tbsp chopped fresh parsley
For the sauce
6 Tomatoes
1 garlic clove
1 Red chili pepper
2 green chili peppers
100 grams Corn (canned)
2 Tbsps Lime juice
1 tsp honey
salt

Preparation steps

Rinse the beans, trim, chop and blanch for 3-4 minutes in boiling salt water. Rinse with cold water and drain.

Peel the onion and cut into strips.

For the sauce, blanch the tomatoes in hot water, rinse with cold water and peel.

Cut two tomatoes into quarters, remove the seeds and coarsely chop. Cut the remaining tomatoes into quarters, remove the seeds and dice and set aside for the sauce. Peel and finely chop the garlic. Rinse the chiles, wipe dry, chop, mix with the drained corn, garlic and tomatoes. Season with lime juice, honey and salt and let stand 20 minutes. Season again to taste.

Heat the taco shells according to package directions. Fill with beans, onions and diced tomatoes and sprinkle with parsley. Top with some of the sauce and serve the rest on the side.
